Presentation

I am an associate professor and project manager in the Nutrition and Health Programme at the Department of Nursing and Nutrition. I teach and research topics such as social gastronomy, food poverty, and how we can make our food systems more sustainable.

I lead the Local Food Communities project and several other projects that focus on making green meals a natural part of everyday life. We do this by creating food communities and involving citizens in the green transition through hands‑on, social food activities.

I teach subjects like sustainable food systems, the psychology behind sustainable behavior, food poverty, and health promotion.

I have a PhD from Aalborg University, Copenhagen in integrated food studies, where I focused on cooperation between schools and farms in relation to food education, sustainability, and citizenship. I also hold an MSc from Roskilde University and a bachelor’s degree in International Studies.

My research interests include sustainability, social gastronomy, food education, and nature‑ and health‑promoting activities for children, adults, and ethnic minorities. I have, among other things, researched school gardens, well‑being, and urban gardening as a way to promote health.
